한식 조리도구 디자인개발의 필요와 전망

초록
한식과 한식문화의 세계화가 한류에서 중요하게 대두되고 있다. 예로부터, 한식은 조리 시간과 순서, 조리방법등 조리과정을 매우 중요하게 여기는 음식이었다. 한식 조리과정에 쓰이는 조리 도구는 한식문화에 있어 가장중요한 요소로 활용되어 왔다. 현대에 이르러 도시화와 핵가족화로 인한 주방환경과 식습관 등 식문화와 관련된라이프 스타일 변화는 한식조리도구에도 영향을 미치고 있다. 그 양상은 크게 세 가지 방향으로 요약해 볼 수있다. 첫 번째, 한식조리도구와 관련된 다양한 환경의 변화. 두 번째, 환경 변화에 따른 전통 조리도구의 변천. 세 번째, 새로운 라이프 스타일에 어울리는 한식조리도구 디자인의 새로운 필요이다. 본 연구에서는 앞선 세 가지 변화를 고찰하고 현대의 변화된 환경에 대응하는 한식 조리도구의 디자인 개발 전망을 도출하는데 목적을두고 있다. 연구 방법으로 한식도구에 대한 이론적 고찰과 선행연구 사례조사를 통해 한식도구에 대한 이론적체계를 수립하였다. 첫 번째, 한식과 관련된 문헌연구를 통해 한식 조리도구의 시대적 변천과 분류를 정리한다. 두 번째, 전통 조리도구와 현대식 조리도구에 관련된 선행연구를 조사하고 한식조리도구와 관련된 환경변화를조사·분석하여, 한식 조리도구의 디자인 개발 현황을 파악하였다. 세 번째로, 한식 조리도구의 변천을 조사하고,새로운 식문화와 조리도구의 새로운 가능성을 모색하여 한식조리도구 디자인의 미래 전망을 도출하였다. 후속연구에서는, 전통 조리도구의 현대화 개발 필요성과 4차 산업혁명 시대의 기술적 측면을 적용한 새로운 조리도구 개발 방안에 대한 연구가 진행될 것이다. 더 나아가, 현대 한식에 유용한 새로운 기능을 적용하기 위한 조리도구의 조형연구의 방법과 사례도 지속적으로 탐구하도록 할 것이다. 본 연구는 우리의 식생활에서 주요한 도구인 한식 조리도구에 대한 연구로서 한식 조리도구는 한국적 식문화의 기능과 조형 그리고 생활이 조화롭게 디자인되어야만 생명력을 얻을 수 있다. 그동안 한식도구에 대한 현대적인 연구가 활발히 이루어지지 않아 왔기때문에 본 연구는 그 본격적인 연구의 시발점으로써 산업디자이너들에게 한식 관련 주제에 대한 환기와 이론적근거를 제시할 수 있을 것으로 기대한다.
Abstract
Globalization of Korean food and Korean food culture is becoming important in Korean Wave. From time immemorial, Korean food was a food that considered the cooking process such ascooking time, order, and cooking method very important. Cooking tools used in the Koreancooking process have been used as the most important factors in Korean food culture. In moderntimes, changes in lifestyle related to food culture such as kitchen environment and eating habitsdue to urbanization and nuclear family affects Korean cooking tools. It can be summarized inthree main directions. First, various environmental changes related to Korean cooking tools. Second, the transition of traditional cooking tools according to environmental change. Third, newneed for a Korean style cooking tool to suit a new lifestyle. The purpose of this study is toexamine the three previous changes and to present the direction of design development ofKorean cooking tools to cope with modern environment. The theoretical framework of Koreanfood tools was established through the theoretical review and previous case studies. First,summarize the changes and classifications of Korean cooking tools through literature studies. Second, we investigated the previous researches related to traditional and modern cookingtools, investigated and analyzed the environmental changes, And understand the designdevelopment status. Third, we investigated the changes of Korean cooking tools, sought newpossibilities of new food culture, and found future prospect of design for cooking utensils. Inaddition, development plan of new cooking tool was considered by applying the necessity ofmodernization of traditional cooking tools and technological aspects of the fourth industrialrevolution era. It is necessary to carry out research on the shaping of cooking tools to applynew functions useful for modern Korean cuisine. This study is about the Korean cooking toolswhich is main tool in our dietary life. and can be vitality obtained by must be designing inharmony of the function, forms, and lifestyles of Korean food culture. Since modern research onKorean food tools has not been actively carried out in the past, this study is the startingpoint. This research will arouse industrial designers' attention to Korean food related topics andgive rationale for the future research and development.
