The effect of satisfaction with supplying-system of the foodservice franchisors on the franchisees' operation performance, franchisee satisfaction, and intention of recontract

The purpose of this study is to determine the effect of the supplying-system operated by franchisors in the food service industry on the franchisees’ performance for the kitchen operation and subsequently the franchisees’ franchisee satisfaction with the performance and the recontract-intention. In order to accomplish the purpose, two franchised enterprises which used mass-purchasing and mass-producing before distributing to each franchisee for the supplying system were participated and eventually 287 franchisees were responded to this survey. Factor analysis and Cronbach’s alpha showed the validity and internal consistency for the survey questionnaire. Regression analysis was used to test the relationships between variables; supplying-system, kitchen operation performance, franchisee satisfaction, and recharter intention of the franchisee. The results present that the franchisee satisfaction with management system, quality of distribution, and quality of foods influenced on differentiation performance and supply performance of franchisees. On cost performance, only satisfaction with the food cost had an impact. The higher franchisee satisfaction with the franchisees’ operations, the higher intention of re-contract for the franchise business. The results suggest that critical points for improving foodservice supplying system as well.
