소규모 레스토랑 물리적환경요인의 상대적중요도와 우선순위 도출 -AHP분석을 이용하여-
A Study on Relative Importance and Priority of Physical Environment for the Success of Small Scale Restaurants -Using AHP Method-

본 연구는 소규모 레스토랑 창업이나 경영 시에 중요하게 고려하여야 하는 물리적환경(Physical envirinment)의 핵심요인에 대하여 전문가들의 의견을 조사하여 그 상대적 중요도(importance)와 우선순위(priority order)를 파악함으로써, 레스토랑 경영자들이 그러한 물리적환경의 핵심요인들을 반영하여 경쟁력을 강화할 수 있도록 기초자료를 제공하고자 하는 목적에서 진행되었다. 먼저, 레스토랑의 물리적환경을 구성하고 있는 요소들을 파악하기 위하여 기존의 선행연구들을 통한 이론적인 연구를 수행하였으며, 동일한 전문가를 대상으로 1차 전문가의견조사와 2차 쌍대비교(pairwise comparison)조사를 수행한 후, AHP(Analytic Hierarchy Process)전용 솔루션인 Expert Choice 2000을 활용하여 실증적인 연구도 병행하였다. 이러한 소규모 레스토랑 물리적환경의 핵심요인의 우선순위(priority order)를 분석한 결과 전체 25개 요인 중에서 청결( .092)요인이 가장 중요한 것으로 나타났으며, 위생( .087), 실내시설의 매력성( .083), 실내시설의 개성( .066), 고객요구에 신속대응( .065)의 순으로 상대적 중요도에 따른 우선순위가 도출되었다. 이러한 분석결과를 바탕으로 소규모 레스토랑의 의사결정권자들이 참고할 수 있는 의미 있는 시사점을 제시하였다.
Abstract
This research figured out the relative importance and the priority of physical environment's core factors which are considered significantly in starting and management of small scale restaurant. To accomplish an aim of this study,literature review based on former study was followed and factors of restaurant's physical environment were provided. After the first experts' survey and the second pairwise comparison survey, a statical package of Expert Choice 2000was used to analyse the collected data and AHP(Analytic Hierarchy Process) was executed. The result of core factor analysis of the priority order of physical environment of small scale restaurants showed that cleanliness(.092) factor was the most important factor of all 25 factors. This research can be referred for managers who are planning for starting using limited capital or running restaurant business to be able to manage their restaurant to be competitive and efficient.
