레스토랑의 지속가능한 경영 실천 평가 지표 : 국내외 관련 인증제도 고찰을 통한 제안

레스토랑 산업이 경제에 미치는 영향력을 고려할 때, 레스토랑의 지속가능한 경영 실천은 미래 지구 환경 보호를 위해 매우 중요한 요소이다. 본 연구의 목적은 국내외 문헌조사를 통해 레스토랑의 지속가능한 경영 실천을 총체적으로 평가할 수 있는 기준을 제안하는데 있다. 미국이 GRA, Green Seal 제도를 분석하고, 현장에서 적용하기 용이하도록 단순하면서도 포괄적 내용을 포함 하는 평가 도구를 제안하였다. 본 연구에서 제안한 레스토랑의 지속가능한 평가도구는 4영역(친환경 정책 수립 및 평가. 친환경 급식관리 활동, 친환경 레스토랑을 위한 지원 활동, 그리고 친환경 레스토랑의 성과), 11개 세부영역에 걸쳐 66개 평가지표로 구성된다. 본 연구에서 개발된 푸드서비스 산업계의 지속가능한 경영 실천을 모니터링하고 확산시키는데 활용될 수 있다. 특히 레스토랑이 음식물쓰레기 감소, 푸드서비스 시설 환경의 재설계, 재활용 운동과 같은 지속가능한 경영을 적극적으로 실천 유도에 기여할 수 있다. 또한, 학교급식과 같은 공공 급식의 여건을 감안하여 일부 지표의 변형을 통해 단체급식분야의 지속가능한 경영 실천을 평가하는 지표로도 활용할 수 있다.
Abstract
Restaurants’ sustainable practices are critical to ensure the protection of the environment of the earth into the future. This study aims to identify the standards of sustainable practices to enable a comprehensive evaluation of sustainable management practices for restaurants. For this, specific goals are is that through literature review, the potential criteria which are comprehensive and simplified are proposed. Criteria for sustainable practices of restaurants were suggested as 4 dimensions, 11 sub-dimensions, and 66 criteria. the outcome of the study can be used to spread sustainable practices in the foodservice industry by encouraging restaurants to actively implement sustainable practices such as the reduction of food waste, redesigning restaurants’ facility environments, and recycling movements of restaurants. Moreover, the developed standards of sustainable practices in restaurants can be used for those of public related foodservice including school foodservice operations by the modification.
