아황산패드를 이용한 캠벨포도의 저장기간 중 향기성분의 변화

본 연구는 아황산패드를 이용하여 캠벨포도를 20-25℃ 실온에서 12일 동안 저장하면서 휘발성 향기성분의 변화를 Gas chromatography-mass detector로 분석하였다. 휘발성 향기성분은 저장기간에 따라 총 31종이 검출되었으며 에스테르 18종, 알코올 8종, 기타 5종 등 이었다. 캠벨 포도에서 저장기간 동안 가장 많이 검출된 향기성분으로는 ethyl acetate, phenylethyl alcohol, benzene acetic acid, ethyl ester, ethanol 등이었다. 에스테르 향기성분 중에서 가장 많이 검출된 성분은 benzene acetic acid, ethyl ester, ethyl acetate였으며 다음으로는 acetic acid, 2-phenylethyl ester, hexanoic acid, ethyl ester, butanoic_acid, 3-hydroxy-, ethyl ester가 검출되었다. 알코올은 phenylethyl alcohol, ethanol, thymol 순으로 검출되었고, 이중 thymol은 아황산패드 처리구에서 가장 많이 검출되었다. 결과적으로 아황산패드에서는 저장기간 동안 미생물에 의한 알코올 발효가 대조구에 비하여 진행이 완만하여 저장기간을 연장할 수 있는 효과가 있다고 생각된다. 그러나 thymol 성분은 대조구에서는 많은 양이 검출되지 않았으나, 아황산패드에 흡착시킨 성분에 의해서 많은 양이 아황산패드 처리구에서 검출되었다.
Abstract
This study analyzed the change of volatile components of Campbell grapes, using the sulfur dioxide pads by gas chromatography mass detectors at the room temperature for 12 days. Thirty one components were found during the storage of Campbell grapes including 18 esters, 8 alcohols, and 5 others compounds. Ethyl acetate, phenylethyl alcohol, benzene acetic acid, ethyl ester, and ethanol were found as major volatile components during the storage of Campbell grapes. For ester flavor components, benzene acetic acid, ethyl ester(4.96-48.42%), and ethyl acetate(11.85-29.28%) were found the most, followed by acetic acid, 2-phenylethyl ester, hexanoic acid, ethyl ester, butanoic_acid, and 3-hydroxy-, ethyl ester. Alcohol flavor compounds were detected in the order of phenylethyl alcohol, ethanol, and thymol, of which thymol was detected the most in sulfur dioxide pad treatment. As a result, sulfur dioxide pads was found effective in extending the storage period by slowing the growth of microorganisms compared to control. However, the thymol component was not detected in the control, but a large amount was detected in the sulfate pad treatment by adsorbents on the sulfate pad.
